Most MBA applicants have two choices to pick from. How do you know which would work best for you?

The business schools absolutely do not care which test you take nor does it affect your chances of obtaining a scholarship (as evidenced by my own results - totalling scholarships worth $200k, admissions at 4 Top 25 MBA programs, and waitlists at Booth, Haas, and Darden).
What does matter is your percentile score which is detailed in the results of both exams.
Therefore, the simple answer is that you should take the test that you are best positioned to succeed in.
And how do you come to that decision?
Take a mock of both tests. You'll likely score better in one or the other. Pick the one you do better on.
If it's a tie on the overall score, pick the test on which you scored better on the Quant section. Business Schools are more concerned with you ability to take on the analytical rigour of the MBA, and are known to place more weight on the Quant section.
If you are willing to invest the few hours it takes to attempt both mocks, you'll eliminate all relevant variables and you can begin your prep confidently knowing you won't have to swap between the two tests mid-way.
